老字号荔枝月饼 首次亮相荔枝湾

含荔枝果肉的荔枝月饼,你见过未?昨日,荔湾区文广旅体局、广州老字号协会及广州市悦盛金发食品有限公司联合召开新闻发布会,宣布广州首个老字号荔枝月饼在荔枝湾面市。

“一湾青水绿,两岸荔枝红”,素有“西关美食之乡”之称的“荔枝湾”因荔枝而声名远播。为积极弘扬西关美食文化,广州老字号企业港三元以岭南佳果代表——荔枝为切入点,将现代科技手段与老字号工艺创新结合,成功研发出可以长期生产和上市的荔枝月饼。发布会上,两个直径50厘米的大月饼免费派给现场上百位市民品尝,市民尝新后纷纷表示,荔枝月饼满口果香,还有荔枝厚厚的果肉感。

据介绍,制造荔枝月饼有两大难点,一是保鲜,二是如何才能留住饼中的果香。要知道,荔枝遇到高温后,最容易流失的就是果肉香味。研发人员经过几百次试验,才克服难题让月饼中留有荔枝的清新香味。企业负责人表示,为了让市民能吃到最新鲜的荔枝月饼,港三元将优化市场服务保障,推出荔枝月饼“现做现卖”服务,确保下单48小时内,可将新鲜做的月饼快递给市内的消费者。

荔湾区文广旅体局相关负责人介绍,将加大鼓励和支持老字号企业品牌创新建设,促进特色文化传承创新,大力推动老字号焕发新活力。
